Baba Christopher Tan has long thought Spanish and Peranakan cooks have a lot in common as people from the two cultures love seafood, pork, spices and rice. He believes that Peranakan cuisine is more than a set of recipes as it is culturally robust, established and complex enough to adapt and flex to new and innovative formats.
