Introducing our Peranakan Tapas Night!!

Baba Christopher Tan has long thought Spanish and Peranakan cooks have a lot in common as people from the two cultures love seafood, pork, spices and rice.  He believes that Peranakan cuisine is more than a set of recipes as it is culturally robust, established and complex enough to adapt and flex to new and innovative formats.

The 12-course Peranakan Tapas menu*:

  1.  Mango Prawn with Kerabu reduction
     
    (Prawn/mango/sambal/lime/herbs)

  2.  Roast chicken wing with smoky sweet glaze  (Chicken/smoked paprika/asam/lime leaf)

  3.  Hae bee hiam in nyonya crepe  (Dried shrimp/sambal/roti)

  4.  Otak-otak "bom" (Fish/spices/wantan wrap)

  5.  "Black gold" babi (Pork/buah keluak/water cracker)

  6.  Spanish potato omelette a la Baba  (Potato/sweet potato/spices)

  7.  Creamy kunyit scallop ceviche (Scallop/turmeric/coconut)

  8.  Silky spiced aubergine (Aubergine/sambal)

  9.  Nyonya gold coins (Five spices/pork)

  10.  Nasi Lemak tower (Glutinous rice/sambal belacan/cucumber jelly/ikan bilis) 

  11.  Fresh banana & Penang nutmeg gelato (Banana/nutmeg/milk/coffee sauce)

  12.  Hot churros with cold durian pengat (Fried pastry/durian/coconut)

Baba Jerry and Nyonya Su Pei on the other hand want to present a new concept of Peranakan dining to the younger generation. And are looking forward to a good collaboration with Baba Christopher from Singapore.
